Fresh Peas with Green Garlic & Prosciutto

Fresh Peas and Green Garlic are both in season. Here’s a recipe that uses both.

Once you shell the peas, the rest is easy.

Ingredients:

  • 1/2 Tbsp Olive Oil
  • 1/2 Tbsp Butter
  • 1 Bulb Green Garlic – thinly sliced
  • 1 Slice Prosciutto – thinly sliced
  • 1 Cup of Shelled Fresh Peas
  • 1/4 Cup Water
  • Freshly Ground Black Pepper

Directions:

Heat the olive oil and butter in a saute pan. Add the green garlic and prosciutto and cook until both are golden. Stir in the peas and add the water. Cook until the peas are tender but still bright green and the water has reduced to create a sauce, about 3-4 minutes. Add several grinds of fresh black pepper.

The Acoustic Medicine Show features guitar, fiddle, mandolin, standup bass and 3-part harmonies on original homespun music.

AMS has become one of Hudson valley's darlin' bands.  Joe Tobin (vocals & guitar) and Bob Cage (fiddle & guitar) are backed up by Davey Frank (mandolin) and Paul Chinelli (doghouse bass).

Market Report

This is just a mere sampling of what you can expect to find in the market this Sunday.

Last Sunday Mead Orchards had a few pints of early strawberries that sold out very quickly. This week hopes to have more to go around.

We welcome new vendor Little Seed Gardens from Chatham to the Sunday market. This week they will have:

May 23rd – Celebrate the Spring Harvest

Watch Efrain “Chef Ef” Martinez of Al-Andaluz Catering prepare Paella using the bounty of the Spring Harvest.
