Fresh Peas with Green Garlic & Prosciutto

Fresh Peas and Green Garlic are both in season. Here’s a recipe that uses both.

Once you shell the peas, the rest is easy.

Ingredients:

• 1/2 Tbsp Olive Oil
• 1/2 Tbsp Butter
• 1 Bulb Green Garlic – thinly sliced
• 1 Slice Prosciutto – thinly sliced
• 1 Cup of Shelled Fresh Peas
• 1/4 Cup Water
• Freshly Ground Black Pepper

Directions:

Heat the olive oil and butter in a saute pan. Add the green garlic and prosciutto and cook until both are golden. Stir in the peas and add the water. Cook until the peas are tender but still bright green and the water has reduced to create a sauce, about 3-4 minutes. Add several grinds of fresh black pepper.

May 23rd – Celebrate the Spring Harvest

 

Watch Efrain “Chef Ef” Martinez of Al-Andaluz Catering prepare Paella using the bounty of the Spring Harvest.

Al-Andaluz Catering Specializes in Paellas, Tapas and other Cuisine from Spain. You may have seen Chef Ef on the Food Network and PBS.

Demonstration will begin at 11am. Tastings will be offered.

Spring Onions, Sorrel and Chive Blossoms will add great flavor to many of your Springtime menus.

Monkshood Nursery has an astounding array of potted herbs, but they will only be in the market for the month of May, so get them while you can. Ray Tousey has Black Currant plants for sale.

 

Dancing Ewe Farm has a wonderful selection of Italian Style Cheeses. Last year, after the Rhinebeck Market closed they headed to their farm in Italy just in time for the olive harvest. Lucky for us, they have brought back some of their own Olive Oil.

Please welcome new vendor, Cowberry Crossing Farm. Stop by to see their selection of biodynamic produce as well as beef, poultry, pork, lamb, etc.

    

The River Garden has fragrant bunches of Lily of the Valley as well as Dried Chile Pepper Wreaths and bunches of Dried Lavender.

 

The Amazing Real Live Food Co. is introducing several new varieties of cheese. Stop by for a sample.

 

Farm Country Soup and Jack’s Pasta create delicious Quiche and Ravioli using fresh, local seasonal produce such as asparagus and ramps.

Migliorelli Farm has tender Spring Broccoli Rabe and several varieties of Radish.

   

Start you day off with a Cinnamon Roll from Tivoli Bread and Baking Co. or take home a loaf of Challah from Our Daily Bread. It makes a great French Toast.

  

Breezy Hill has Apple & Pear Cider. Ray Tousey makes Currant juice sweetened with his honey.

 

Clinton Vineyards and Cascade Mt Winery have a wonderful selection of local wine.

 

No time to cook? Stop by and see Meri at Julia & Isabella Fine Fare. She always has a selection of ready-to-eat meals like meatloaf, chili and salads made with fresh, local produce…plus a wonderful selection of Hudson Valley cheeses.

 

Highland Farm has a huge variety of venison products. Buffalo meat is available too.

 

Quattro’s has a line of Smoked Meats like this Smoked Duck & Smoked Turkey. Also available: Smoked Pheasant Sausage and Smoked Chicken.

 

And last but not least, we welcome Abas’ Falafel to the market this year with their delicious made to order falafel. So popular they sold out by noon last week.
